Directions – preparing your watermelon base

Step 1 Remove the cap from each end of the watermelon

Step 2 With a long slender knife cut along the inside of the watermelon just before the rind.

Step 3 Slowly work your way around the circumference ensuring it reaches the bottom.  Flip watermelon and repeat the cut.

For the “Frosting”

There are many different alternatives you can use: Gluten free rice whip cream or greek yogurt,  if you want to be creative and make your own you can make “marshmallow frosting”

Homemade “Marshmallow frosting”


1/2 cup honey or agave

2 egg whites


Step 1 In a small saucepan over medium heat, bring the honey to a boil, stirring frequently.

Decrease the heat to low and simmer for 4 to 8 minutes, watching constantly and stirring occasionally.

Step 2 In large bowl, using a hand held mixer whip egg whites to stiff peaks, drizzle honey mixture slowly into the egg whites, whisk continuously until blended.

Step 3

Decorate with your favourite fruits & nuts
