Valentines Day Red Velvet Cupcakes

I have always had a love for creating desserts ever since I was young, but 3 years ago when I started my strict no sugar no gluten, no dairy lifestyle change. I started feeling like there wasn’t any treats that I could eat (and I LOVE my sweets) I made it my mission to figure out a way to create all the desserts I loved, except this time they would be sugar free, gluten free and dairy free!!, & WOW they a million times more amazing than what I ate before.  These treats leave you feeling happy, satisfied, and are filled with vitamins/proteins/fibres/LOVE

Red Velvet Cupcakes 

Preheat oven 350 degrees

Ingredients  

1 cup gluten free oats

1 ripe banana

1 cup almond milk

1-2 small steamed beets

1 tbsp vanilla

1 tbsp ground flax

1 tsp baking powder

squeeze of lemon

Method

Place steamed beets (peeled/cooked) into high speed blender with a squeeze of lemon

Add the rest of the ingredients into the blender and combine.

Pour mixture  into cupcake cups & bake for 15 minutes & allow to cool before icing.

Pink Icing

Ingredientcups

1/2 cup vegan cream cheese

1 tbsp coconut yogurt

1 tsp honey

Few drops of beet juice (depending color pink desired)
