Chocolate Cacao, Cashew caramel truffles

Raw/Vegan – Dairy/Gluten/Refine sugar free 



2 cups pitted and packed dates, divided

1 cup raw cashews (or pine nuts)

5/8 raw cacao powder

1 teaspoon vanilla

1/4 coconut oil

Pinch of cinnamon

Pecans for garnish


Step 1

For caramel: Place 1 cup dates, cashews and vanilla in a high speed blender or a food processor until smooth.  Place in freezer for 10 minutes.

Step 2

For fudge: Place 1 cup dates and coconut oil in high speed  blender or food processor and process until smooth.  Add cacao powder and cinnamon and process again.

Step 3

Roll fudge into small balls, slightly flatten and make a depression in the centre.  Roll caramel into smaller balls and press into each centre.

Step 4

Garnish with a raw pecan & place into fridge for 1 hour before serving.
