Gluten Free Quinoa Burgers with Creamy Avocado Sauce

What I did….

Quinoa Burger Ingredients

2 cup quinoa

1 red pepper

1/4 red onion

2 garlic cloves

Handful of kale

Handful cilantro

Handful of raw almonds

To help with binding quinoa burgers you can use  – if you need too

1-2 eggs or 1/4 cup soaked chia seeds

Method 

Step 1 Rinse quinoa until water runs clear, drain and transfer into a medium pot.  Add 3 cups of water and bring to a boil.  Cover and reduce heat to medium low, allow it to simmer until water is absorbed.  Once quinoa is cooked set aside to cool.IMG_1659

Step 2 Place red pepper, onion, garlic, almonds garlic, kale (and whatever else you would like to add, the more the better!! 😉 into a blender and blend until mixed.

Step 3 Once quinoa has cooled, scoop out the ingredients in the blender & mix with quinoa.

Step 4  Once mixed together start forming into patties.

Step 5  Warm up frying pan with 1 tsp of ghee.  Cook patties until lightly brown on either sides.

Quinoa Burger Toppings 

Gluten free bun

Sunflower sprouts

Tomatoes

Spinach

Raw Sauerkraut

Pickles

Avocado Sauce ingredients 

1 ripe avocado

1/2 cup plain not fat greek yogurt (optional)

2 Tablespoon olive oil

2-3 Garlic cloves

2 Teaspoons fresh lemon juice

1 Hot pepper

Avocado Sauce Method 

Place all ingredients in high speed blender until mixed well and add to your quinoa burger as a finishing touch. Enjoy!!!
