- 1 1/2 cup almond flour
- 1/2 teaspoon sea salt
- 2 tablespoon olive oil
- 1 tablespoon organic honey
- 1 tablespoon vanilla
- 1/4 cup olive oil
- 1/4 cup organic honey
- 3 eggs
- 1/2 freshly squeezed lemon juice
Preheat oven to 350 degrees, Grease an 8- inch square baking dish. To make the crust – combinded almond flour & salt in large bowl. In medium bowl whisk olive oil, organic honey and vanilla extract. Stir wet ingredients into the almond mixture until throughly combined. Press the dough into the prepared baking dish and bake for 15 minutes.
To make the lemon filling – In a blender combined olive oil, honey, eggs and lemond juice. Mix until smooth.
Once the crust is finnished baking pour the lemon mixture directly on the hot crust and bake for 15 minutes. Let cool in the baking dish for 30 minutes. After the 30 minutes place into refrigerater for 2 hours to set.
Cut and serve.
