Fresh Rolls & Fresh Cashew Honey Sauce 


Ingredients that I used:  you can add more or less

Rice noodles

Rice papers


Red Peppers


Green Onion



Cut up all of your fresh veggies and place them aside.

In a small sauce pan cook rice noodles (they cook very fast)

In a frying pan fill just enough water to cover your rice paper sheets on medium heat, when ready to assemble place one at a time into the hot water, you will notice it becoming softer.  Spread your soft rice paper on a plate and start packing with all your delicious veggies.

Sauce Ingredients

1 cup cashews – you can also use peanuts or almonds.

6 tablespoons filtered water

2 tablespoons coconut oil (as a liquid)

1 garlic clove

1/4 cup olive oil

3 teaspoons of fresh lemon juice


Place all ingredients into high speed blender or food processor and blend until smooth.  This dipping sauce is a little on the thicker side so if you prefer a more thinner sauce just add more water.
