Chocolate Mint Brownies

Chocolate Mint Brownies – gluten free, dairy free, vegan


1/2 cup coconut oil, melted, plus a little more for the pans
1/2 cup garbanzo and fava bean flour
1/2 cup almond flour

1/4 cup potato starch
2 tablespoons tapioca starch
1/2 cup maple syrup
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup cocoa powder
1/2 cup mashed ripe bananas
1 tablespoon pure vanilla extract
1/4 – 1/2 teaspoon mint extract

Preheat oven to 325 degrees.

In a medium bowl, whisk together garbanzo fava bean flour, almond flour, potato starch, tapioca starch, baking powder, baking soda, salt, and cacoa powder; set aside

In a large bowl, mix together banana, maple syrup, coconut oil, vanilla and mint extract.. Slowly add flour mixture, stirring to combine. Stir in water until it forms a batter. Fold in cacao nibs and fresh mint. Poor mixture into baking pan.  Bake until a toothpick inserted into the center comes out clean, 18 to 22 minutes. Let cool completely. Cool before cutting.
