Raw Coffee Vanilla Cake

Raw / Dairy Free / Gluten Free / Refine Sugar Free

Crust Ingredients 

1 cup pecans

1 cup dates

2 tablespoon cacao

1/4 teaspoon cinnamon

Method

Place all ingredients in high speed blender (Vitamix) until mixed.  After all ingredients are blended together press into a cake pan (I used an easy release cake pan)

Cashew vanilla cream Ingredients

2 cups cashews

1 teaspoon vanilla

1/4 cup either (honey, maple syrup or dates) – I used dates

1/8 teaspoon salt

1/3 cup organic strong coffeeIMG_1727

Method

Place all ingredients in high speed blender (vitamix) until smooth.

Pour over crust cashew cream over crust, and decorate.  I used raw pumpkin seeds and goji berries.

Place into freezer.

If you are still craving for more coffee flavour, you can create this delicious coffee drizzle

Coffee Drizzle

1/2 cup dates covered in coffee

Blend until smooth then drizzle over individual pieces when ready to serve. (to make the drizzle thinner add more coffee, and thicker more dates)
