Black Bean Mushroom Burgers

*Gluten Free, *Vegetarian, *Sugar Free, *Nut Free

Ingredients

*1  1/2 cup cooked black beans drained

*2 eggs

*2 garlic cloves

*1 tbsp olive oil

*1/2 cup red onion

*1 cup mushrooms

*1/4 cup sun dried tomatoes

*1 cup gluten free oats

*1/8 cup sunflower seeds

*1/4 cup flax seed powder (I blended whole flax seed in my Vitamix to make into flour)

*1 tsp cayenne pepper (you can add more depending on how spicy you like it)

Method

Step 1 *Saute onions until transparent & add garlic and mushrooms, saute for 5 minutes.

Step 2 *Place black beans, eggs, garlic, sun dried tomatoes  & olive oil in a high speed blender and combine until it turns into a paste like consistency & set aside.

Step 3 *In separate bowl combine gluten free oats, flax seed powder, sunflower seeds, cayenne pepper.

Here is the fun part 😉

* Mix all three steps together, & by hand create burgers! Grill for about 5 minutes on either side.   Makes about 12 patties. perfect for freezing & enjoying later.
