Almond Cake with Chocolate Frosting




2 cups almond flour

1/4 cup cacao powder

1/2 teaspoon baking soda

1 cup honey

2 large eggs

1 tablespoon vanilla


Preheat the oven to 350 degrees.  Grease a 9 inch cake pan with coconut oil & dust with almond flour

Step 1 In large bowl, combine the almond flour, cacao powder, baking soda.

Step 2 In medium bowl, combine the honey, eggs and vanilla extract.

Step 3 Stir the wet ingredients into the almond flour mixture until throughly combined.  Scoop the batter into a cake pan.

Step 4 Bake for 35 to 40 minutes, until a toothpick inserted  into the center of the cake comes out clean.  Let the cake cool in the pan for one hour, then serve.

Chocolate Icing


1 cups coarsely chopped chocolate 75% plus.

1/2 cup olive oil

2 tablespoon honey

1 tablespoon vanilla extract

Step 1  In medium sauce pan over low heat, melt the chocolate with the olive oil until smooth, once smooth stir in honey and vanilla extract.

Step 2  Place chocolate mixture in the freezer for 10-15 minutes until cooled.  Remove from the freezer and whip with a hand held mixer until thick and fluffy.

Step 3   Dress cake with chocolate frosting when cake has cooled & top with fresh edible flowers
