Vegetarian Fietas on romaine lettuce & homemade fries

Last dinner that both Tijen and I did not want it to end!!!

Ingredients: warm filling 

Olive oil

1 red onion

2 cloves garlic

Handful mushrooms

1/2 red pepper

1 teaspoon turmeric ( I add this into everrrryyything)

1 teaspoon cumin

1 teaspoon coriander

1-2 cup black beans

1 small sweet potato

you may need to add a little bit of water…

Method

Satue onions, garlic, peppers, mushrooms, add in spices black beans and sweet potato (cooked)


Ingredients: cool salad

1/2 cup parsley

1/2 tomato

1/2 red onion

1 Avocado

1/2 cooked cup organic corn (optional)

Method 

Dice all ingredients, squeeze lemon & olive oil on top

Additional sauce 

1/2 cup raw cashews

1/2 lemon (juiced) or applecider vinegar

2 garlic cloves (raw)

1/2 red pepper

Method 

Place all ingredient into a high speed blender or food prosessor and combined until smooth.  This is ABSOLUTELY delicious!  I use this to dip my fries as well.

Once everything is prepared fill romaine lettuce leaves, collard leave etc.

As far as the fries….I used 4-5 small white potatoes…. I dont usually measure exactly how much olive oil and apple cider ingredients I use, I generally just drizzle it on top of the cut potatos until it looks well saturated. ;/  I then add fresh dill, sea salt, black pepper and cayenne pepper.  Bake on 400, for about 30-35 minutes making sure I check ever once in awhile making sure the fries are not burning or sticking to the pan.
